could i use peat planting pots to put in the GS like most people do with the other little planting pots or are they no good?

You can use the peat pots, however, keep in mind the peat will break down rather quickly, leaving you with just a hole in the Great Stuff.
but the plant should cover that up right i mean you wont really be able to see it
Probably won't notice it. By the time it starts to de-grade you should have the background covered with plant growth.
