Crusted over FF culture media

I have recently tried culturing FF's using this mix

1 cup banana (about 2 bananas)
1 cup apple sauce (2 jars of Heinz apple baby food )
1 Tablespoon vinegar
2 cups oat meal ( readybrek )
1 sachet brewers yeast
1/2 pinch bakers yeast

After 4 days the surface is going dry and crusty but under this, the mix is still moist.

1) Will the larva be able get though the crusty layer ?
2) Will the FF be able to lay eggs through this crust ?
3) What is the best consistency for a mix ?....stiff, sloppy, runny ??

Any help would be welcome

I have not had good luck once the top as crusted over. Maybe others have had other experiences.
