Again, I'm going to take a guess here...

#1 - the frogs are 'newly' acquired. Sometimes it takes weeks to MONTHS for them to settle in and be out in the open a lot ect. Just because you witnessed them eat in front of you at the exact time you dumped flies in, doesn't mean that they will continue to do this behaviour. They may have been very hungry. Continue to judge their size rather than seeing them eat - they are probably eating when you are not around.

#2 - the enclosure is very minimally planted and has bright light. These two issues combine to make the frogs much more skittish and desirous of hiding. I would plant more, add more leaf litter and reduce the intensity AND frequency of your lighting. Make sure the light is not resting on top of your glass lid /top. Your temperatures may be higher than you think as well.

#3 - SPRAY more. Hand spray the vivarium more. Disregard those probes and their humidity readings - they are probably not accurate anyway. Hand spray more.
