I have a Viv setup for three years now and was wondering do you ever have to add or replace the soil?

Sure. Add some soil if ya want. If the older soil gets compacted by watering ect, but there's no need to arbitrarily 'freshin' it up. Soil doesn't smell bad unless there is something weird or seriously wrong - added to the tank. Even a dead frog decomposes to the point there is nothing left and also, there is no smell.
